With its vines planted in small parcels around the 18th century château, this family-owned domaine is situated in the lieu-dit of « Pavé », on the southern extremity of the village of St. Lager. Since the early 1600’s, the Brac de la Perrière family have been directly involved in viticulture and the commerce of the region’s wine. Today, Michel Brac de la Perrière and his six children, run the estate and since 2007, have been investing in a programme of organic conversion which will be completed by the 2013 vintage. Equal care and attention has gone in to the wine-making process, helping to ensure that Château du Pavé is one of the flagship wines of the Beaujolais region.

Situated 4km. to the west of Belleville-sur-Saône, the 3ha. of vines are situated on the south-west facing, lower slopes of the Côte de Brouilly, at about 260 metres altitude, planted on granitic limestone-clay (smectite) and schist with a top-soil of granitic sand. The average age of the vines is 40 years’ old and they are planted at a high density of 10,000 vines per hectare. Pruning is short with a mixture of gobelet and Cordon Royat, the latter on trellising. Since 2007, no chemical fertilisers or treatments have been used on the vineyards as part of the conversion to certified organic viticulture, along with total grass cover between the vines. Hedgerows around the estate have also been re-instated to help develop the estate’s biodiversity and integrity.

Chris Piper took over the wine making at Château du Pavé in 2001 and vinifies the wines using traditional methods. No sulphites are used until bottling, when only a minimal dose is added for stability. Indigenous yeasts are used to ferment the whole bunches over a 7-9 day period at between 27°-30°C. A twice-daily pump-over is used, with a délestage on the fourth or fifth day. Following a light pressing, the wine is left on its lees in lined, concrete vats and following the malolactic fermentation, is racked and then left in tank until bottling, without filtration, in May following the harvest. These are concentrated, fuller-bodied Brouillys with the ability to age, in good vintages, for up to five or six years.
